Your (delicious sounding) escarole suggestion reminded me of a question that has been on my mind for a while. Utica greens. My family is originally from Syracuse where you can get excellent Utica greens everywhere. I live in Virginia where nobody has ever heard of them. I've tried to make them using recipes I've found online a couple of times, but they've been underwhelming. Do you have a good recipe or any suggestions I could try? Thanks!

I hope it’s not too much, but I thought of another question. I took your advice and ordered from Rancho Gordo. The Royal Coronas are amazing but I don’t know what to do with the Christmas limas. I’m definitely in an “I judged a bean by its color” situation. What’s the best way to use them? I see white bean recipes everywhere but nothing about these stripey purple beauties. Thanks!
Hi Erin! I love the Christmas Limas too - they are gorgeous! I would recommend a chili with those guys. If you eat meat, I think beef would work well. If not, those guys are heft enough to stand on their own!
