For you (or any readers) who may be interested in a vegetarian alternative, I don’t think you could do much better than Anya von Bremzen’s mom Larissa‘s version. I’ve been making it for over 30 (!) years and it’s yet to let me down. Veselka! The best. It's such a comforting stew. But yes, best to wait until winter! Or you could try cold borscht?!
