I just want you to know that this looks so good, I have had this tab open on my laptop since you published. I don't have an oven in Paris but I figured there has to be a way around that!

A kitchen torch! I don't have one, but, maybe? I do have a microwave that might be a convection oven of some variety but I'm not sure. It's a rental and we just moved in a few months ago.

Dear Colu, we made the soup last night. The taste was wonderful. My family comments included that the celery and cabbage were not cooked enough. Also, that the croutons were too soggy. I am sure this was all related to my cooking, but it was quested that the bread could be toasted before adding to the top of the pan. Have you tried this? I am certain that you have.

You can certainly pre-toast! All ovens/stoves are different, so please feel free to tweak to your liking. Same with the cabbage!

It is truly brilliant and I haven't seen the most recent (though I think about the Grey Gardens episode often). Ooh. It's snowing here today, and I've got a pot of Rancho Gordo white beans on the stove to make a version of this with a local smoked pork chop added to make my guy happy (though I think the cheesy croutons will do the trick.

Also -- Unlitro is nice! I can't drink much red now (wakes me up all night) but I had a bottle of that this summer when we had guests and it's such a lovely, old-fashioned, wine-with-food kind of wine.

And welcome Sugo! What a face that dog has!

It was delicious (tho someone picked around the vegetables. sigh) BUT i LOVE learning a new technique! I toasted the croutons in the oven before putting them on the soup for extra crunch, but I'm going to use this *all the time* this winter ... it's adds such great texture and flavor ... and while someone doesn't like vegetables, he's a huge fan of bread and cheese in all it's permutations.

I made this last night and it was absolutely delicious! I added guanciale, aged Gruyère and used Como for the croutons. My husband is still talking about it this morning. 😋
