This looks delicious. And: Hahah! I was referring to some television reviewers who sounded like they'd never eaten in a restaurant much less worked in one. (I always forget that people actually read the crap I write! I finally had to delete that note.)
I was mansplained RE how the show wasn't really about restaurants, etc. I deserved it! I need to stop treating notes like it's the designated repository for every first thought in my head about every topic. Anyway, I love rice salads and can't wait to try this!
Brava, Colu, for resisting pasta salads. The only one I'll tolerate is that Roman one with the tomatoes and red onions and olive oil, very cold, poured over the hot pasta right out of the pot. Pasta alla checca, it was called, back when I live in Rome, and I'm making it as soon as we get some ripe tomatoes in Maine. And meanwhile, I'll make your mamma's beautiful rice salad and feel grateful.

Please never stop "noting." I love them all! Hope you enjoy the salad! xx
Question: would mozzarella (or feta?) be a worthy sub for provolone? Making this now!!
Yes! Both would work! Cube the mozz or crumble the feta!

Grazie, Nancy! Now that sounds like a "pasta salad" I can get behind! Xx
