As promised, I’ve included the turkey meatball recipe from this week’s “Dinner Again” column!
Ground turkey can be dry, but with the addition of both grated zucchini and mascarpone (both which provide moisture) you end up with light and fluffy meatballs that are quite impressive, if I do say so myself.
I served them in red sauce, because I had a hankering, so I’ve also included my recipe for marinara below.
I prefer making my own, but if you have a brand that you like, feel free. If you’re not feeling saucy, serve the meatballs with roasted vegetables or size them a bit smaller and add them to soup. They would also sit nicely inside a hero roll covered with the sauce and cheese and then broiled.
