Potato Chip Cookies
Yes, that's correct.

I haven’t been feeling very social this holiday season as I’m recovering from surgery and don’t feel very sparkly. But, I did have the pleasure of attending two lovely events last weekend. And, I think I’m almost feeling festive?
I’m so eager to wrap things up and hibernate over at Dan and Helen’s next week. Chad, Sugo and I pack up our things and camp out for days, even though it’s only a 10 minute walk away. We’ve been celebrating the holidays like this for five years now and I look forward to it all year long. I love it so much that I also included an essay about it in my forthcoming book…
The book includes recipes that we make every year including A Christmas Lasagna; Bacon Sarnies and New Year’s Day Ham Soup with White Beans and Cabbage. There’s also a menu section in the back if you’re into that sort of thing - I am!
Speaking of Better at Home, have you pre-ordered your copy yet? It would be a nice Christmas present for someone to receive on March 10 when it’s published!

Last Friday, the lovely Jenny Cipoletti and the Paris fashion brand ba&sh hosted a beautiful holiday lunch at the Mayflower Inn in Connecticut - I was very flattered to be included. Jenny and I met at a dinner this past fall and got along instantly. In addition to being a fantastic person, she is a jewelry designer and she and her husband founded an olive oil and pasta importing company called Cucina Cipoletti. I’m sure you can understand why we got along so well.

I love this velvet blazer from ba&sh that I wore to the event. It’s perfect for the holidays, but I can see myself wearing it other times of the year. I styled it with this blouse, (which honestly gets more wear than everything else in my closet) and a vintage broach, similar to this one. This could also work, oh and I love this one too. But, if I’m being honest, the real star of the show was my cane. Who would have thought? She’s a real conversation starter…
On Saturday, I finally made it to Dan Pelosi’s annual Holiday Cookie Party! I haven’t been able to attend in the past due to conflicts and luckily this year it worked out. And, what at a lovely day it was! Vibes were high. My friend Elaine kindly baked on my behalf as I’m not quite back in front of the stove yet and she also shared this week’s recipe for Potato Chip Cookies! Yes, you read that correctly. They are so delightful and a breeze to put together. Take a peek below for the recipe!

🍵 Drink: Pique! I’ve spoken about this before, but now more than ever it’s so important to stay hydrated (!) it keeps your energy up and generally it just makes you feel better. I’m continuing to do so with Pique’s Radiant Skin Duo. At this time of year, it’s important to create rituals that ground us through the craziness and this one does just that. Bonus is that I feel glowy.
☀️ The Radiant Skin Duo combines Sun Goddess Matcha and B•T Fountain — two powerhouse products that work together to hydrate, protect, and nourish your skin from the inside out. I start my mornings with the matcha for calm energy and antioxidants, and in the afternoon, I add B•T Fountain to my water to keep my skin glowing all day. It’s not just another skincare step — it’s a simple daily habit that supports gut health, strengthens the skin barrier, and leaves your complexion looking fresh — this one works from within.
✨ Starting this ritual now feels great — it’s an easy habit to keep going into the new year, so you can stay radiant even when life gets busy. 💚 For a limited time, you can get 20% off the Radiant Skin Duo + a FREE Starter Kit (with frother + glass beaker!) with my link: CLICK HERE!
🥟 Make: Soup Dumpling Lasagna. I got TikTok’d and fell down the viral “Soup Dumpling Lasagna” black hole and couldn’t get out. I love, love dumplings and crave them all the time. This technique is honestly brilliant. You take a pound of pork and season with with soy, sesame oil, mirin, garlic, fresh ginger and salt and layer it between cabbage leaves and wonton wrappers and repeat. You then steam it for about 20 minutes and top it with more soy and some chili crisp. It satiated my craving and I will be making it again. Next time with ground lamb and cumin. The options are endless. I love my Staub for this.
🌽 Crunch On: Masa Chips! Chad and I are both big tortilla chip fans and these are insanely good. They are seed oil-free and made from just three natural ingredients: organic corn, grass-fed tallow (beef fat), and sea salt. They come in a number of flavors. I’m partial to the original, but they are all good. Use Colu20 when checking out for 20% off your order and get snacking!

Potato Chip Cookies
Our friends Elaine and her husband John moved to Hudson from Texas a few years ago and she said these Potato Chip Cookies are a Christmas staple down there. I love anything with a potato chip (remember Chad’s recipe for a Dirty Bird?) so I’m so pleased to share them with you here. If you have an upcoming cookie party, bring these!
Elaine Eichelberger
Yields about 3 dozen cookies
INGREDIENTS
16 tablespoons butter (1 cup/2 sticks) at room temperature
¾ cup granulated sugar, plus more for flattening the cookies
1 ½ cups flour
1 teaspoon vanilla
1 cup crushed potato chips
1 cup chopped pecans
Powdered sugar for dusting
METHOD
Preheat the oven to 350° F.
Cream together the butter and sugar. Gradually add in the flour until incorporated.. Add the vanilla and potato chips and stir to combine. Fold in the pecan.
Drop 1 heaping teaspoon of dough onto an ungreased cookie sheet and repeat with remaining dough leaving about two inches between each. Dip the bottom of a water glass in some granulated sugar and gently flatten each of the cookies.
Bake for 8 to10 minutes, until golden. Dust with powdered sugar while warm.
Store in an airtight container for up to 5 days.
