As most of you know by now, it’s been a full house this first summer in Nova Scotia. I wouldn’t have it any other way. The first night people arrive, we usually have the inaugural snack night for dinner. This wasn’t planned, but I believe we fell into this habit because friends get to the farm generally after a long day of driving and the hour is an in between one, so we graze.
There have been nights of lobster dip, saucisson and oysters. Evenings with eggplant dip, oysters Rockefeller and leftover roast chicken with salsa verde. But, the one dish I keep returning to is roasted sweet peppers with feta and herbs. I simply cannot get enough. They pair well with everything and are gorgeous to look at, making them seem much more complicated to prepare than they actually are.
Luckily for you, peppers are in season right now and you can make them yourself and hopefully impressive whoever happens to be at your table at whatever time of day they happen to be there.
