These gray January days are beginning to string together. In fact, I don’t remember a January that has felt so bleak or the last time the sun was out! I fancy taking a brisk walk, but it’s hard to motivate when the sky looks the color of a muddy puddle. I’ve been biding my time, reading, watching movies, cooking a lot at home and going to bed early. I’ve also been eating a lot of things in bowls…
As I mentioned in Wednesday’s newsletter, I do my best to use everything in my fridge to create weeknight meals, so as little as possible goes to waste. I also look to my busting- at-the-seams pantry to use items that have been in there for some time to try and make some room. I said to Chad last night that we could probably live off of what’s in there for over three months without ever leaving the house. And while that’s a somewhat comforting thought, I also found it equally alarming/bordering on hoarder status… But, as a result of my thriftiness, I’ve been to able created some pretty great meals such as this one.
